San Jose is not much of a tourist destination. Better places for fun are San Francisco (about an hour north), Santa Cruz (about a half hour south).
But if you must stay in San Jose you could try visiting:
Santana Row -- for window shoppiing, restaurants in a European-style atmosphere
Tech Museum of Innovation -- It's downtown.
Egyptian Museum -- Not a bad museum; kind of interesting.
Winchester Mystery House -- Good for a few hours.

Best advice on what to do while staying in San Jose for a week?: leave the area! In all honesty, San Jose is the hub of the Silicon Valley. Not a ton of charm. Valley Fair and Santana Row are stellar for shopping (across the street from each other). There are some wineries in Los Gatos and Saratoga (just miles from SJ depending on where you are). Lots of bike trails and hiking in the hills out of Saratoga and Cupertino. Santa Cruz is a good suggestion if you want to see the (cold) ocean. While you're down there Monterey and/or Carmel are very charming and also boast the coastline. Most people do not skip the Monterey Bay Aquarium if they visit the city. San Francisco is a must especially if you haven't been. And you can get there on public transportation if you need to: ride VTA's Light Rail system from San Jose to the Caltrain station in Mountain View. Caltrain takes you right up the Peninsula into San Francisco.
